CFF Hong Kong & Macau had the privilege of launching the first Chef’s Table by Classic Fine Foods at Whisk Hong Kong. Chef William Lau took us on an unforgettable 8-course gastronomic adventure that left our palates dancing with delight.
The evening began with a sublime caviar course, after which guests were treated to a succulent lobster dish, showcasing the chef’s mastery of Japanese flavor and presentation. Followed by a melt-in-your-mouth Wagyu beef, cooked to perfection and accompanied by a velvety sauce. To conclude the experience, they were treated to a delicate and artfully presented blackcurrant dessert that left us in culinary bliss.

During July, Classic Fine Foods UK, along with their customer, The Savoy Londonโs kitchen team, recently visited our partner, Nurtured in Norfolk.
Founded by former chefs Allan and Sue, Nurtured in Norfolk emerged from their desire for more consistent and flavorful garnishes. Starting with micro cress in 2009, they now supply over 280 high-quality products, including edible flowers, aromatic herbs, sea vegetables, and other edible plants, to the UK’s finest restaurants and top chefs.

Visiting the farm was a privilege, allowing them to learn more about the exceptional products offered by Nurtured in Norfolk. The pastry team at Classic Fine Foods Singapore, together with a group of talented pastry chefs, recently embarked on an incredible business trip to France and Switzerland during July! During this trip, they visited some of our amazing suppliers and seized the opportunity to learn more about our products.

Weiss – Chocolaterie franรงaise: Known for their high-quality chocolates, Weiss Chocolate demonstrated how they carefully select cocoa beans and turn them into delicious chocolates. Their mix of traditional methods and new ideas was truly inspiring. The Pastry Chefs even participated in a 2-day hands-on training with Chef Jonathan Chave from Weiss at the L’Ecole Ducasse.
Maison Corsiglia: Experts in candied fruits and glazed chestnuts, Corsiglia demonstrated how they preserve fruits to keep their natural taste and texture. Their glazed chestnuts, in particular, were a highlight of the visit.
PCB Creation: At PCB, the team learned about their top-quality decorations range.ย
HUG Food Service: Famous for their perfect tart shells, Hug combines tradition with modern techniques to create consistent, high-quality products. The team saw first-hand the care and precision that goes into each tart shell, making them the ideal base for dessert creations.
This excursion has profoundly enriched our team’s understanding and gratitude for the exceptional ingredients we offer, solidifying our pledge to uphold the utmost quality in everything we do.
Classic Fine Foods Indonesia in collaboration with Valrhona Asia recently hosted a Pastry Demo workshop in May, at the Bali Culinary Pastry School. The workshop featured the winner of the Coupe du Monde de la Pรขtisserie 2019, Chef Otto Tay. The workshop was spread over 2 days, with the first day focusing on the Bali Culinary Pastry School students and the second day with industry professionals.
Chef Otto Tay took both classes through the process of creating wonderful pastries such as; Chocolate Topaz, Hukashaka, Itakuja Cocoa Galette and Mini Gateaux De Voyage. Each of these creations featured the exceptional quality and unique flavors of Valrhona chocolate, highlighting its versatility and superiority.

For 2 days in July, we hosted the talented Michael Guarro from Ponthier and PCB Creation, who captivated audiences with masterful demos of Christmas-themed desserts and innovations.
Guests witnessed Miquel’s impressive pastry skills, from festive yule logs to elegant desserts showcasing Ponthier’s premium fruit purรฉes and PCB Creationโs innovative range.

In July our team at Classic Fine Foods Indonesia and their partner Ponthier held the โPonthier Bar Eventโ, which was dedicated to passionate cocktail enthusiasts and aspiring bartenders!โ
Hosted in the wonderful setting of CRIO Restaurant in Jakarta, the event showcased a refreshing array of 6 drink recipes, showcasing the diversity of Ponthier in cocktails and mocktails. โ
The evening was enjoyed with delicious cocktails such as the refreshing Green Apple, Lime Side, and Pear Highball. Whilst mocktails like the Blackcurrant Soda, Mai Mango, and Berry’s provided equally delicious non-alcoholic options. All drinks loving crafted with the range of fruit puree from Ponthier.

“Night at the Racecourse โ Happy Wednesday” is a vibrant initiative organized by the Hong Kong Jockey Club. Each Wednesday, the Hong Kong racecourse transforms into a lively party scene, providing a fun-filled evening for people to gather after work. The event features live music performances, dancers, food and drink stalls, and the exciting horse races for which Hong Kong is famous.
This year, the event has been expanded to align with the French May festival, celebrating French culture in its entirety. The Hong Kong Jockey Club has collaborated with Classic Fine Foods Hong Kong to welcome the renowned French cheesemaker, Patrice Marchand. Patrice set up an old-school food truck, offering guests beautifully curated cheese boards, allowing them to savor the rich flavors of France.
In June, Classic Fine Foods Vietnam took part in the Open Day 2024, a Food and Wine Exhibition highlighting the finest Spanish flavors, at the Caravelle Saigon Hotel. Themed “A Spanish Pantry Exhibition,” the event drew a diverse audience, including chefs, restaurant owners, supermarket representatives, distributors, wine experts, and food enthusiasts.ย ย

Ikeden, is a Pastry wholesaler and one of the top customers of Classic Fine Foods Japan. On the 4th & 5th of June, the Fair was held, being the first time, it’s been held since Covid restrictions were lifted. It was a great opportunity for our pastry sales team to connect with end users of Ikeden and showcase our amazing products.
The team at Classic Fine Foods Singapore had the pleasure of hosting renowned Pastry Chef Richard Hawke at TheTasteLab. For 2 full days in July, Chef Richard Hawke demonstrated mastering the art of vegan and gluten-free pastries using a range of Louis Francoisโs products!
In this immersive class, attendees were taught the fundamentals of creating delicious allergen-free treats. The workshop focused on many aspects, including working with proteins for perfect whipping, incorporating fiber into recipes, understanding & using gelatin alternatives, stabilizing & intensifying mousse and coulis recipes while reducing sugar.
The goal of these 2 days was to achieve sophisticated taste and texture in every bite. A big thanks goes to Chef Richard Hawke for his time and to Louis Francois for their amazing ingredients.

Over 3 days in April and in collaboration with Stella Orientis, CFF Singapore were honored to host Romain Pellet, the renowned French craftsman of Charcutier Traiteur and world record holder for Pate en Croute. He shared his expertise with participants on mastering the art of charcuterie and delicatessen during a 3-day masterclass. We also held a meet and greet session at Mandala Club, where we showcased creations from the masterclass. This event provided our customers with the opportunity to meet Romain Pellet and receive insightful advice from the MOF.
